50gUnsalted peanuts
1bnSpring onions
225gWhite cabbage
1smCucumber
2lgCarrots
2tbSmooth peanut butter
1tbClear honey
  Juice of 1/2 lemon
  Seasoning

1. Heat the vegetable oil in a wok or large frying pan, add the nuts and vegetables and stir-fry for 5 minutes.

2. Mix together the peanut butter, honey and lemon juice and stir into the pan. Cook for a further 3 minutes until the vegetables are tender but still crisp. Season to taste and serve immediately.
